Estas an\u00e1lises englobam o monitoramento das mat\u00e9rias primas, ambiente, manipuladores e produto acabado.<\/p><p>Os\u00a0laborat\u00f3rios respons\u00e1veis pelas <a href=\"https:\/\/controllab.com\/segmentos\/microbiologia\/\"><strong>an\u00e1lises microbiol\u00f3gicas<\/strong>\u00a0<\/a>realizam ensaios em diversas matrizes alimentares, com o objetivo de isolar, identificar e quantificar os microrganismos presentes nas amostras. An\u00e1lises laboratoriais s\u00e3o pontos-chave no controle microbiol\u00f3gico e visam reduzir ou eliminar pontos que s\u00e3o t\u00e3o indesej\u00e1veis em toda a cadeia alimentar.<\/p><p>Logo, essas an\u00e1lises servem para nortear as tomadas de decis\u00f5es em rela\u00e7\u00e3o ao processamento de um alimento, que efetivamente determina a qualidade final de um produto.<\/p><p>Os produtores de alimentos no Brasil devem seguir uma s\u00e9rie de regulamentos estipulados pelas leis brasileiras. Durante todo processo produtivo, \u00e9 necess\u00e1rio seguir as boas pr\u00e1ticas de fabrica\u00e7\u00e3o\/manipula\u00e7\u00e3o observando a regularidade de todas as etapas, mantendo bons n\u00edveis de consumo e preservando as qualidades e caracter\u00edsticas necess\u00e1rias aos seus produtos.<\/p><h4><strong>RDC 331\/2019 E IN 60\/2019<\/strong><\/h4><p>Em dezembro de 2020, entraram em vigor duas novas legisla\u00e7\u00f5es relacionadas a qualidade microbiol\u00f3gica de alimentos: RDC 331\/2019 e IN 60\/2019.<\/p><p>O conte\u00fado da <a href=\"https:\/\/www.in.gov.br\/en\/web\/dou\/-\/resolucao-rdc-n-331-de-23-de-dezembro-de-2019-235332272\" target=\"_blank\" rel=\"nofollow noopener\"><strong>RDC 331\/2019<\/strong><\/a> abrange toda cadeia produtiva dos alimentos, tratando dos padr\u00f5es microbiol\u00f3gicos e suas aplica\u00e7\u00f5es. Na resolu\u00e7\u00e3o, se enquadram os processos de produ\u00e7\u00e3o, armazenamento, transporte, distribui\u00e7\u00e3o, comercializa\u00e7\u00e3o ou qualquer outra etapa que fa\u00e7a parte da cadeia de alimentos. De acordo com ela, os alimentos n\u00e3o podem conter microrganismos patog\u00eanicos, toxinas ou metab\u00f3litos em quantidades que causem danos \u00e0 sa\u00fade do consumidor.<\/p><p>J\u00e1 a <a href=\"https:\/\/www.in.gov.br\/en\/web\/dou\/-\/instrucao-normativa-n-60-de-23-de-dezembro-de-2019-235332356\" target=\"_blank\" rel=\"noopener sponsored\"><strong>IN 60\/2019<\/strong><\/a>, que complementa a RDC 331\/2019, apresenta as listas com os padr\u00f5es microbiol\u00f3gicos para alimentos prontos para oferta ao consumidor. Esse padr\u00e3o, de acordo com a <a href=\"https:\/\/www.gov.br\/anvisa\/pt-br\" target=\"_blank\" rel=\"nofollow noopener\"><strong>Ag\u00eancia Nacional de Vigil\u00e2ncia Sanit\u00e1ria (ANVISA)<\/strong><\/a>, \u00e9 o crit\u00e9rio que define a aceitabilidade de um lote ou processo. O objetivo da defini\u00e7\u00e3o desses padr\u00f5es e sua ado\u00e7\u00e3o em toda cadeia de produ\u00e7\u00e3o dos alimentos \u00e9 a garantia da sa\u00fade do consumidor.<\/p><p>Para promover um ambiente de\u00a0an\u00e1lises de excel\u00eancia\u00a0no\u00a0laborat\u00f3rio microbiol\u00f3gico, a\u00a0<strong>Controllab<\/strong>\u00a0oferece m\u00faltiplas solu\u00e7\u00f5es para o\u00a0controle de qualidade, contemplando as matrizes de leite e derivados, farinha e similares, produtos c\u00e1rneos, bebidas n\u00e3o alco\u00f3licas e a identifica\u00e7\u00e3o \/ quantifica\u00e7\u00e3o dos principais microrganismos aliment\u00edcios.
